I logged into Facebook this morning to find my Granddaughter Renee' Marie striking a pose in Trader Joes with her own little "Shopper in Training" shopping cart and felt so much pride for my daughter Lovelisha for shopping for healthy foods in her attempts to change the way she feeds her family.

We share the lessons in life we learn with our children in hopes they can be spared the pain of learning the hard way.  They like us usually have to learn the hard way.  There comes a time however when we are old enough to appreciate the advice of our parents.  That time usually comes after we have learned the hard way enough times.  Today I seek the advice of my wise and intelligent Mother, in fact I need her advice today, her guidance, her love.

I didn't always seek my Mothers advice, in fact I rejected it needing to be my own person and determined not to be my Mother which really was silly as I am My Mothers daughter and proud to say so today.  My oldest son Semaj II follows in my footsteps of demanding independence from his Mother like I did.  It is great to be getting to a place where he too values and respects my opinion more now than ever.  When he doesn't though I have Lovelisha and go right over his head to her, hahahaha.

Lovelisha and Semaj face the same challenges raising their children as I did raising mine.  A limited budget with a never ending table that needs to be topped with food to nurture the little ones.  Changing to Organic, preservative free foods can cost more, not changing can cost our lives at a much younger age.  Weighing out the options I think battling the costs now makes for a better choice later.  Lovey agrees and I am so proud of her.

Baby Semaj is doing much better.  He is up and moving around, drawing, playing video games, checking out the toys at the hospital and getting back to his normal unbreakable boy status.  He is such a blessing to us all.  He serves as a reminder to us all to "get back up, never give up, we can conquer anything in life" I love you Baby Maj every minute of every hour of every day of my life.





Speaking of Family I am missing my Family and want to get back to Michigan for the Summer to spend some time with them.  Talking about my Uncle Mike and Aunt Kim on a recent post made me realize how much I want to go home to see them.  I am visualizing a tow to Michigan for a summer visit there.  Maybe even a truck of my own to tow myself and Mr. Marley there you never know I have been using my dollar store flower wheel and picturing myself driving in my truck towing One Love safely behind me and believe I will soon be independent to tow myself across Country to all my locations.

I talked to my Mother for over an hour this morning planning my visit to Virginia to spend 10 days with her in May.  I am so excited to see her in person.  I want my Mother in my life today, I need her also.  But more importantly I want her, I always needed her but didn't admit that to myself till now.  She is a huge factor now, I value her insight and actually listen to her advice weather I do it my way or not I make my choices with the consult of a woman who has been here done this so to speak and truly has my best interest at heart.  I love you so much Mom, so very much.

Cooking today for a healthy tomorrow!
So I cooked my first healthy big dinner pot last night and happy to say it turned out fabulous.  The pot rendered 10 dinners, wow.  One last night, one for tonight and eight 2 cup servings in freezer bags for the rest of the month.

I used a medley of beans, mostly Great Norther Beans mixed with carrots, chicken breasts, Turmeric and other mystery seasonings as explained in the recipe below.  I even added some raisins and have to say I really liked the way the flavors blended and danced on my taste buds.  This one gets 3 Stars and will certainly be used again.






Healthy ingredients for a healthy life!






Cooking it was fun, I had no idea of what all was going in it but had a picture in my mind of what I wanted the final result to taste like.  I started with boiling the beans and chicken breast in a mixture of chicken and vegetable broths along with onions and garlic.

I absolutely love the 21 Seasoning Salute from Trader Joes.  It only costs $1.99 a jar.  I bought the Turmeric at Staff of Life in Santa Cruz.  The coconut oil added a pleasant flavor when mixed with the turmeric seasoning.  I really like this medley of flavors and textures.

The Carrots and Raisins were a nice touch and really brought out the flavors while adding more healthy ingredients and exciting the soup with different colors.




I realize more now than ever that while a new diet can be a challenge it is so doable.  Now that the word challenge is a good word in my world rather than a chore as it used to be I find I conquer challenges with much more ease and more importantly I anticipate challenges as they build character and bring about change in my life and the world around me.  Anyone who wants to change to healthier eating can afford to trust me.  I live off of $850 per month, that's it.  If I can afford to shop organic anyone can.  It's like everything else in life "A Choice".  I am learning that making better choices each day is full of rewards that making the wrong choices never rendered.  Making better choices in the beginning was harder and required more persistence to stay true to my Choice to make better Choices. Now it is easier to make better choices after reaping the rewards of facing the challenges that come along with changing to better choices, learning to go without some of the things I believed I needed but were only things I wanted and honestly didn't need.  I believe in myself and my ability to make better choices each day, I believe in my ability to change my world and the world around me more each day. I believe in us all more each day and that fricken rocks for real.

Lelania's Chicken & Bean Medley Soup

A healthy bowl of healthy love for the belly!

Ingredients
All ingredients I used for this recipe were organic, they were also additive and preservative free.
3 chicken breasts (boneless, skinless, cut in chunks, raw)
1 lb great northern beans
1/2 lb bean medley mix (choose a mix of your choice, I used the mix at Staff of Life in Santa Cruz from the organic bins)
1 chopped onion
3 cloves minced garlic
6 small carrots diced
1/2 raisins
1 box Trader Joes free range organic chicken broth
1 box Trader Joes organic vegetable broth


Seasonings
Okay so I have a bunch of bags of organic seasonings without labels on them and added some of them based on smell to the soup so you will have to use your own imagination on adding your choice of mystery seasonings, wink!
2 cup servings ready for the freezer


Trader Joes 21 Seasoning Salute  (shake to taste)
Organic ground sea salt to taste
Turmeric Seasoning (shake to taste)
1 tsp. organic garlic powder
3 tbs. ground flax seed
Mystery Seasonings (shake to taste)


I boiled the beans in the broth with the all ingredients except the carrots and raisins which I added the last hour of simmering so they did not get to mushy in the mix.  This recipe rendered 10 - 2 cup servings.  Have fun, use your imagination and alter it as you wish, make it yours, make it ours.  Hope you like this one as much as I do.
