While going through the veggies this morning in the fridge I noticed I had a bag of Trader Joe's Organic Kale that needed cooking. Having never cooked Kale I decided since I was trying something new I would go all out and see just how creative I could get with this bag of kale.

I rummaged through the fridge and cabinets to see what called to me and found some beginning ingredients for the new invention. I had 2/3 of a red onion left from breakfast and 1/2 a tomato so they were going to become one with the Kale. While pulling out a pack of Trader Joe's ground turkey I started to get excited thinking I might be on to something here.
I found a can of Trader Joe's Light Coconut Milk, some organic canned chick peas and more goodies. Before I knew it I was sitting at my desk eating some of the tastiest healthy food I have ever had and certainly ever made. Learning how to cook new things is really starting to get exciting now that I am learning I can make my own recipes out of all these healthy ingredients. I like this one the best so far, it is soooooo yummy and super healthy.
What a great lunch, it was quick and easy. I going to bag up the left overs in 1 cup servings and freeze them for the rest of the week. This is really getting fun, I think you will like this one a lot!
1 10 oz bag of cut and cleaned kale from Trader Joe's (fresh)
1/3 red onion chopped
1 tsp crushed garlic
1 lb organic ground turkey
1 can organic chick peas
1/2 can light coconut milk
1/2 box Trader Joe's free range chicken broth
1 cup fresh baby leaf spinach
1/2 chopped fresh tomato
organic sea salt to taste
turmeric to taste
a pinch of coriander seed
21 Seasoning Salute
Brown turkey, onions & garlic with a pinch of sea salt and couple shakes of 21 Seasoning Salute. Add kale, spinach, chick peas, chicken broth, coconut milk, tomatoes and seasonings and simmer on medium for about 15 minutes and serve warm.
