(: Get Well Soon :)

I have been battling a head cold and cough the past few days and finally went to the hospital early this morning.  First let me say that Dominican Hospital's emergency department has the greatest staff, they were awesome, upbeat, kind and caring from start to finish.  I got prescribed two inhalers for my lungs and told to continue on with the tea's, juice, water and soup I have been using to help me get better.

Really cool thing was that although I have sinusitis the doctor didn't prescribe me any antibiotics.  I was confused at first as I have always been prescribed antibiotics for sinusitis over the years.  He explained to me that antibiotics really aren't that effective in treating sinus infections, just let it run it's course and it will pass.  He doesn't like to give antibiotics unnecessarily, wow, that rocks!

 So I made this totally healthy "Get Well Soon" soup for myself today.  Totally staying on my diet with this one and should help me get well soon, yeppers!

Thought I would share this one with you as it turned out super tasty and already I feel a little better, enjoy!



One Love "Get Well Soon" Soup



1/3 bag of Trader Joe's "Just Grilled Chicken Strips" (additive & preservative free) cut in chunks
1/2 organic yellow onion chopped
1/2 organic red onion chopped
2 cloves fresh organic garlic minced
1/2 inch nub of organic ginger cut into thin sticks
1 organic yellow summer squash chopped
2 organic small orange bell peppers sliced
2 organic zucchini sliced thick
handful of fresh organic baby spinach
21 Seasoning Salute (Trader Joe's)
sea salt
ground black pepper
basil
3 tbls coconut oil, virgin expeller pressed
1 box Trader Joe's free range organic chicken broth

Saute` veggies in coconut oil with seasonings adding squash, zucchini and spinach last for texture sake.  Add chicken, broth and simmer!
